Pumpkin Coffee Cake
Pumpkin lovers are excited about this time of year, so lets give them an additional reason to be excited and spice up their day.
Ingredients
1 tablespoon butter
2 tablespoon sugar
2 tablespoon pumpkin puree
A few drops vanilla extract
1/4 all purpose flour
1/8 teaspoon baking powder
2 tablespoon of flour
1 tablespoon of brown sugar
1/4 teaspoon of cinnamon
Directions
1. In a mug soften 1 tablespoon of butter in microwave, about 5 seconds. Do not melt it, just soften. Stir in a tablespoon of sugar and mix until well combined. Stir in pumpkin, vanilla (just a little bit, drops at most), flour, baking powder, and a pinch of salt and cloves; stirring until combined. Use the back of your spoon to smooth out in the bottom of the mug.
2. In a separate, small bowl, combine 1 tablespoon of butter, 2 tablespoons of flour, 1 tablespoon of brown sugar, and 1/4 teaspoon of cinnamon. Use your fingers to pinch the butter and mix it in the other ingredients. When it starts to look like lumpy sand, and all the ingredients are combined, pour on top of the cake batter in the mug.
3. Cook in the microwave for 1 minute. Eat while its warm.
Give these fun mug treats a try and warm up your whole family.
